How to Make an Old Fashion Banana Cream Pie & Self-Rising Flour Pie Crust

This old fashion Banana Cream Pie will take you back to "the good ole
days". It is a simple recipe but it is delicious. If you do not have a
favorite pie crust recipe, try this Self-Rising Flour Pie Crust for your
pie shell. Busy, in a hurry, or just don't like to make pie crust, there
are some great ready-made crust in your grocer's freezer.

OLD FASHION BANANA CREAM PIE

2 cups milk
3 egg yolks, save whites for another use
1 tbsp butter
1/3 cup flour
1/8 tsp salt
2/3 cup sugar
1 tsp vanilla
2 bananas, sliced
baked pastry shell

Scald milk. In the top of a double boiler pan, mix together the flour,
salt, and sugar. Slowly add the scalded milk to the flour mixture,
stirring constantly until smooth. Cook slowly in the double boiler until
smooth and thick, about 15 minutes. Beat egg yolks slightly and add a
small amount of the hot mixture to them and beat constantly till smooth.
Quickly add the egg mixture to the double boiler and stir constantly. Cook
about 3 minutes more. Add the butter and vanilla; stir in to blend well.
Remove top of double boiler from the stove. While mixture cools slightly,
slice the bananas into the pie shell. Cover bananas with the filling
mixture. Serve with dollops of whipped cream or use the egg whites to make
a meringue and make this a banana meringue pie. Either way, it is
delicious.

SELF-RISING FLOUR PIE CRUST

2 cups self-rising flour
2/3 cup solid shortening
6 to 8 tbsp water

Cut flour and shortening together until mixture is like coarse crumbs. Add
the water, starting with 6 tablespoons, and mix until a stiff dough is
formed. Gradually add more of the water, if needed. Divide the dough half.
Roll half of the dough to a circle about 1/8-inch thick. Transfer to a pie
plate. Add the filling. Roll remaining dough like the first half and use
over the top of the filling. Using your fingers, turn the edges of the
dough under to seal and press into a scalloped designed edge. Cut small
slits in the top crust to allow steam to escape during baking. Bake
according to the pie recipe.

Note: To make 1 pie crust for the above pie, divide ingredients in half.
Continue instructions above. Fit the crust into a 9-inch pie plate. With a
fork, make some holes in the bottom and sides of dough to allow air to
escape. Without this, the crust will puff up. Bake at 350 degrees until
lightly brown. Check often and if puffing occurs, stick fork into the
puffing area. Allow to cool before filling.

How To Make Beef Barley Vegetable Soup

During the cold winter months, I like to make a lot of homemade soups and
stews for my family. This recipe was given to me by my best friend 10
years ago and it was her grandmother's recipe.

Since my family only consists of 4 family members, I will make the recipe
and we will eat half of the soup for dinner that night. I will freeze the
other half in a freezer container for a future meal. If you are freezing
any of the soup, make sure you leave a 1/2" head space in your freezer
container to allow for expansion during the freezing process. The soup
will keep for up to 9 months in your freezer.

Beef Barley Vegetable Soup

1 1/2 lbs. lean ground beef
6 cups tap water
3 beef bouillon cubes
2 cups carrots, sliced
1 1/2 cups onions, coarsely chopped
1 1/2 cups celery, coarsely chopped
1/2 cup green pepper, chopped
1/3 cup barley
1 teaspoon table salt
1/2 teaspoon black pepper
2 bay leaves
1/4 cup catsup
28 ounce can crushed tomatoes with juice
8 ounce can tomato sauce

Note: You can substitute the beef bouillon cubes with 3 teaspoons of
instant beef bouillon if desired.

In a large frying pan, brown your lean ground beef until it's no longer
pink. Drain the grease and set aside. In a large 5 quart stock pot,
combine all of the above ingredients together in the order that they are
given in the recipe. Bring soup to a full boil and then reduce heat and
simmer for approximately 60-70 minutes. (or until the vegetables are
tender.) Remove bay leaves before serving.

This recipe will yield approximately 10 servings.

Kuan Yin is a human figure who had such intense dedication to helping
others that she became the Greatest of the Protectors. The central figure
in Tibetan Buddhism; The Dalai Lama, is said to be a living incarnation of
Avalokitesvara, an expression of infinite compassion towards others. The
Dalai Lama possesses enormous insight into human suffering.

The Lotus Scripture, also called the Saddarmapundarika Sutra, and The Pure
Land Scripture, also called the Sukhavativyuha Sutra, both tell of The
Bodhisattva's powers to save lives and to deliver people from any type of
calamity, if they simply call upon her name! She can save them from evil
people, wild beasts, monsters, illnesses, fires, floods, natural
disasters; anything actually!

The entire 25th chapter of the Lotus Scripture is devoted to Kuan Yin; and
it states that her name is Avalokitesvara (same as the male counterpart),
as well as Kannon, and of course; Kuan Yin. The text describes that she
can save a person from any type of trouble or calamity. She can appear in
any of at least 33 different forms as well!

history, mythology, stories, and rituals concerning the Goddess of
